Why is this so earth-shattering? I love grilled cheese, but for some reason dealing with butter is a pain in this instance. I recently read SOMEWHERE (can't remember) that grilled cheese is better made with mayo, which is, after all, nothing more than oil and eggs.
It was great. So easy.

My mother always used olive oil. I will try this mayo idea.
I've never made that kind of grilled cheese; my mother always toasted bread and cheese under the grill. If you make it that way, you can add some mild red onion atop the cheese and have a real treat. I only have a countertop convection oven now, so it doesn't use much energy.
Must try this - Bill might actually eat a grilled cheese made with mayo!
